Gingerbread Cookies

480g Flour
1/2 tsp Salt
1 Tbsp Ginger
2 tsp Cinnamon
1/4 tsp Clove Powder
85g Butter - Room temp
150g Dark Brown Sugar (Packed)
2 Eggs
100g Honey
70g Maple Syrup
2 tsp Vanilla Paste
1 tsp Lemon Zest


  1. In a large bowl mix flour, salt and spices. Set aside.
  2. Place your brown sugar and butter into your mixer bowl and mix for a couple of minutes. Add egg and mix until egg is completely mixed thoughtout the dough. Set aside.
  3. Mix together honey and maple syrup in a small bowl, add to dough mixture. Add vanilla paste and lemon zest - mix all together.
  4. Finally add the flour mixture and continue mixing until it all comes together to form a cookie dough.
  5. Roll out the dough between two sheets of parchment paper to about 0,5 - 0,7 mm thick. Place in fridge for around 30 minutes.
  6. Remove dough from fridge. Cut out the forms you wish and place upon your baking sheet, spaced apart, cover once again with parchment paper. Bake cookies at 190° C for 8-9 minutes or only 5 minutes for mini cookies.
