Kneading is the most important step in working with fondant. The longer you knead the fondant, the more elastic and pliable it becomes. For the best result, knead a small portion until it is soft and pliable and then combine the small portions. After kneading you can roll out the fondant until it has a thickness of 3mm, the ideal thickness to cover a cake. For a cake of 7,5cm high with a dia of 25 cm you need approx. 680 grams of rolled fondant.
